Apple Kale Smoothie

christina rumpf

We have another healthy recipe for you this month! This smoothie is refreshing and great for the summer.

The green apples contain pectin, a fiber source that helps healthy bacteria grow in your gut. Pectin can also help you break down foods more efficiently, and the high fiber in the green apple can help the rest of your digestive system, too!

Kale is one of the most nutrient-dense foods on the planet! It’s loaded with powerful antioxidants, helps fight heart disease and cancer, and can reduce inflammation. It’s also loaded with vitamins, especially Vitamin K and Vitamin A. Raw kale has even been shown to help lower cholesterol!

  • 1 Green Apple, Sliced and Core Removed
  • 1 Cup of Curly Kale* Washed with Stems Removed
  • 1 Cup of Ice
  • 1/2 Cup of Milk1/2 Cup of Yogurt
  • 1-2 Dates
  • Juice of Half a Lemon

Add everything to a blender and blend at a high speed until it becomes thick and smooth. Add milk as needed to get the consistency you desire.
*This type of kale has more fluffy texture than a flat kind of kale.

If you have any dietary or health concerns, particularly with thyroid problems or diabetes, we recommend speaking with your doctor to see if this smoothie is a good fit for you!
