Cherry Tomato Soup Recipe


Stay warm this winter and impress your family with this delicious creamy tomato soup! This soup is actually great to eat both hot and cold, but we prefer the hot during these cooler months! It’s so easy to make and oh-so delicious.

Here’s what you’ll need:

  • 1 Tbsp Olive Oil
  • 1 Yellow Onion, diced
  • 2 Tbsp Tomato Paste
  • 1 28oz can of Whole Tomatoes with liquid
  • 2 Cups Vegetable Broth
  • 1/2 Cup Great Northern Beans, rinsed and drained
  • 1 Tbsp Butter
  • Black Pepper, to taste
  • Maple Syrup (or sweetener of choice), to taste – You don’t need much!
  • Salt, to taste
  • Pumpkin Seeds, optional garnish
  • Sour Cream, optional garnish

Cook the diced onions in olive oil until transparent. Add the tomato paste and let it cook for a few more minutes. Add the whole canned tomatoes and veggie broth and bring to a simmer for 30 minutes. Carefully transfer everything to a blender and add the beans, butter, and adjust the taste with salt, pepper, and maple syrup/your sweetener of choice. Blend until completely smooth and serve! Option to put sour cream on top and garnish with crunchy pumpkin seeds.
